Aachari Tindora in Air fryer


Tindora also known as Ivy gourd /Tondli/ Kundru is a green Vegetable popular in many parts of India. It is cultivated in Countries like tropical Africa/ Malaysia and other South East Asian Countries and China. Basically the plant is an Outdoor plant and the Vegetables are being used in Indian dishes and their Leaves /Stems/ roots are used in Ayurveda medicine. As they age they turn to red Color inside and not good to eat.

This Vegetable is strongly suggested to diabetic Patients because it has ability to minimize Blood Sugar levels. This is particularly because of an essential liver enzyme contained in this particular food which standardizes the Sugar metabolism within your body by improving glucose production.


Tindora is good source of fiber. Fiber intake has number of benefits to the body. Fiber supports healthy blood sugar levels by helping body to digest sugars slowly, offsetting the effect of sugar entering the bloodstream. Eating foods high in fiber promotes feeling of fullness which helps curb appetite and support healthy weight.

If you cook Tindora stir fry, you are going to like this easy to prepare Stir fry in Air fryer.

On stove top you need to stir in between to avoid burning and stirring.

Perfectly baked vegetables with Zero monitoring. Tindora is a tasty vegetable which doesn’t need any spice powders except little salt and red chilli powder. But I added homemade acchar powder (Just a blend of Red chilli powder, coriander powder, Cumin powder, Garlic powder, Fenugreek powder and salt).

Enjoy this tasty Stir fry with Steamed rice or with Phulka (Indian bread) and Dal.


Ingredients:


2 cup Tindora

Optional one Chopped carrots and Onion (thinly sliced)

1 tbsp Aachari Powder

2 tbsp Oil

Finely chopped Coriander and Mint leaves

Method:


Season chopped Tindora with very little salt and 1 tbsp Oil. Mix well before transferring into air fryer basket.

Bake at 370 degrees for 5 minutes.

Take out the basket and add chopped carrot if you are using. Bake at 370 degrees for 5 more minutes.

Cool little bit and transfer to a Bowl.

Season thinly sliced onion with very little salt and 1/2 tbsp. Oil. Bake for 10 minutes.

Now add baked tindora and carrots to Onions. Season with Acchari Powder.

If needed Bake altogether for 2-3 more minutes.

Serve with Roti Indian Bread or steamed rice and Dal.
