Aloo Paneer Bird Nest

Ingredients:

Water - 300 milliliters, Potatoes - 415 grams, Salt - 1/2 teaspoon, white flour - 60 grams, Water - 100 milliliters, Green peas - 100 grams, Bell pepper - 85 grams, Garlic - 2 teaspoons, Ginger - 2 teaspoons, Green chili - 2 teaspoons, Red chili - 1 teaspoon, Turmeric - 1/2 teaspoon, Salt - 1 teaspoon, Coriander - 2 teaspoons, Grated paneer - 100 grams, 250 gram Vermicelli, Grated paneer - 100 grams, Salt - 1/2 teaspoon, Black pepper - 1/2 teaspoon, Corn starch - 1 tablespoon, Oil - for frying, Onions - 100 grams, Mint leaves - 15 grams, Green chili - 1 tablespoon, Sugar - 1 tablespoon, Salt - 1/2 teaspoon


PREPARATION

Take a pressure cooker, add 300 milliliters water, 415 grams potatoes, 1.2 teaspoon salt and cover it with lid. Cook till you hear 3 - 4 whistles. Remove it from heat. Drain and peel the potatoes. In a mixing bowl, add 60 grams white flour, 100 millilitres water and mix it well. Keep aside. In another mixing bowl, add the boiled potatoes and mash them. Add 100 grams green peas and mash it again. Then, add 85 grams bell pepper, 2 teaspoons garlic, 2 teaspoons ginger, 2 teaspoons green chili, 1 teaspoon red chili, 1/2 teaspoon turmeric, 1 teaspoon salt, 2 teaspoons coriander and mix all the ingredients well. Now, add 100 grams grated paneer and mix it well. Take some mixture in your hands and shape it into a nest. Dip it in white flour paste and add vermicelli on it. So, its look like bird’s nest. Refrigerate for 15 minutes.

In a mixing bowl, add 100 gram grated paneer, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1 tablespoon corn starch and mix it well. Take some mixture in your hand and shape it into small balls like eggs. Heat sufficient oil in a skillet and deep fry these until golden brown and crispy. Drain it on an absorbent paper. Keep aside. Now, deep the prepared nest until it turns golden brown and crispy. Drain it on an absorbent paper and keep aside.

Green Chutney:


In a vitamix , add 100 grams onions, 15 grams mint, 1 tablespoon green chili, 1 tablespoon sugar, 1/2 teaspoon salt and blend it into a smooth paste.

Take the bird nets and spread the prepared chutney on it.


Now, add the prepared eggs on it.


Serve hot.
