Colourful Rice Flour Vadi...


Rice Vadi is an awesome comfort food of all times.


Easy homemade fryums recipe that is a rage with Gujarati family.


These go well any meal during our day or as a snakes.


One can also soak rice overnight in enough water and Grind it to a smooth paste the next day and prepare Vadi Dough.


I prefers using store bought basmati rice flour.



Ingredients:


2 cup Rice flour

1 tsp Carom seeds

1 tsp Cumin seeds

1 tbsp Salt

1/2 tbsp baking Soda

¼ asafoetida

2-3 Chopped Green Chill

4 cups water approximately (you might need more or less depending upon the quality of the rice flour used)


INSTRUCTIONS

Add asafoetida and baking soda in to flour. Mix well. Then add mixture into pan and add about 2 cups of water to it and mix well until lump free. Add cumin seeds, carom seeds, chopped green chilli, and salt. Allow it to cook on a low to medium high heat until the raw smell disappears. Colour will also change. Keep stirring it at regular intervals in order to avoid the formation of lumps. After 20-22 minutes of cooking, it will be done to perfection. Let it cool down a bit.

Prepare plastic sheet, spread round shaped Vadi with the help of a spoon or by hand.

The mix should be warm when you spoon it out on the sheet. It should not be cold, otherwise it becomes impossible to spread them out.

You also can add food colour to make colourful Vadi before you spread.

Allow them to sun dry for nearly 2-3 days depending upon the sunlight. Flip them over after done on one side to let them dry evenly from all the sides.

Deep fry them in hot oil few at a time and enjoy.
