Fusion Pavbhaji Quesadillas


Method:


First make thicker version of Pav Bhaji; 2 tsp oil in a pan and 1 tsp butter add 1 small chopped onion, 2-3 green chillies finely chopped, salt to test, 1 tsp pav bhaji masala made paste with little water.


Fry masala nicely than add 1-2 tomatoes chopped , 1/3 cup fresh green peas and let it cook for 5 minutes slow to flame, so that all water gets burnt out. Cover the lead and cook for 5 minutes. Now take a masher and crushed all mutters and add 3 boiled potatoes, 1/3 cup beetroot and 1/3 cup carrots mic well than add finely chopped coriander leaves.


Making Tortillas :


Take 1 cup wheat flour and add 1/2 cup white flour. Mixing both will give you nice crispy texture. Add some cumin seeds and crushed chillies - this will make tortilla little flavourful, add salt to test and 1 tbsp oil mix nicely and keep adding water to the dough till you get soft dough apply little oil and cover the dough for 10-15 min.


Now make small roundels and make paratha size tortillas. half cook Tortillas both the sides using little oil both the side. After taking Tortillas off the flame,apply little oil.


Prepare little salad (onion, coriander,tomatoes with salt in it)


Now take few drops of oil on pan and place Tortillas on pan make a thick layer of bhaji, a layer of onion salad and cheese. Cover the top with another Tortilla, press gently.


Few more drops of oil on tortillas and spread it and reverse the tortilla; and cook both sides 5-7 minutes.


Cut them in triangles and dip in roasted papad crush and coriander mix.
