Instant Pot Papdi No Lot (Khichu)
Simple recipe to make everyone's favorite Gujarati dish Papadi no Lot also called Khichu.
Add 4 ½ cups water in the inner pot of the Instant Pot and set 'Saute' setting. Add salt to taste, cumin seeds, Carom seeds, Sesame seeds, 1 tbsp oil. Pressure cook on high for 5 minutes. While the water is boiling, measure out 2 cups rice flour. Once the water is boiling, add green chilies and ¼ tsp papad kharo and put the IP on sauté mode for 3 minutes. Turn the Instant Pot off and carefully remove the inner pot with the boiling water on the counter.
Slowly add the rice flour a little at a time, ensuring that you are incorporating the flour well by mixing continuously. Wooden rolling pin (velan) works the best. Once all the flour has been added to the water, put the inner pot back into the Instant Pot.
I have Add 1 1/2 cups of water to your Instant Pot and Place the trivet that came with the pot inside. Place pan directly on top of the trivet, so that it should not touch the water and gave steam boil. Close the lid with the vent in the sealed position. Change the setting to 'Steam' for 10 min. Open lid once steam has vented. Serve hot with peanut oil and Methi masala.
I have garnished with sesame seeds and methi masala before serving here.
Option 2:
Open the cooker carefully, Then add the rice flour and with a rolling pin, poke about 4-5 holes in the flour so the water can seep in. Let the mixture boil for about 2-3 minutes. Close the lid and set the cooker to steam for 10 minutes. Quickly release and stir constantly and vigorously until there are no lumps. If the lumps are still there blend it with a hand
Notes:
Add more water if you want yours to be loose (instead of 4 ½ cups do 5-51/2 cups of water). I highly recommend adding the cilantro and green garlic while you are stirring. It give it’s a really amazing bright green color.
