Air Fryer Recipe:
Slice 2-3 Karela /Bitter, slice 1 potato, 1-2 chopped garlic, Red chili Powder 1 Tbsp., Turmeric 1 Tsp, Salt 1 Tsp, Lemon Juice 2 Tbsp. Veg. oil 1 Tsp and jaggery 1 tbsp.
Wash, trim on both the ends as needed, and make thinly slice of bitter gourd into mixing bowl and add salt, lemon juice.
Mix well, cover and keep aside for 15 Minutes. After 15 Minutes, squeezed out excess water from the bitter gourd.
Meanwhile, preheat Air fryer at 370F for 3 minutes and grease air fryer safe pan with cooking oil spray. Add bitter gourd into the pan and insert pan and air-fry for 12 minutes, add potatoes after 5 minutes. Air Fry until it becomes crispy and brown color.
Meanwhile, heat 1 Tsp oil in a pan and fry chopped garlic until it becomes slightly brown color. Now add bitter gourd, red chili powder, turmeric and jaggery and mix well and cook for 2-3 minutes. bitter gourd fry is ready to serve, serve hot with roti. Enjoy!!!
Options:
Instead of potatoes you ca use onion which brings the taste to this dish as well.
Using lemon is important for taking out the bitterness.
Also, you can sauté sliced bitter gourd with some Olive oil, that will help to reduce bitterness.
