Methi Paara, namak Paara, Methi Diamond cuts
Namak Paara or the diamond cuts is one of the popular Indian snack and much easier to make at home. One of the snack most of us make more often. To the traditional Namak Paara, we can add fresh methi and crushed dry fenugreek leaves (Kasoori Methi) and make this delicious Methi Namak Paara.
Dry methi leaves add a nice aroma and flavor to the dish. So why not try this variation instead of plain Namak Paare!
This time I try making in Air fryer and it’s perfectly crunchy, look and test same as one we made deep frying.
Serve Methi Namak Para with hot Masala Chai or a cup of coffee.
Ingredients:
1 Cup wheat Flour
2 tbsp. all-purpose flour
2 tbsp. Semolina
1 tesp red chili powder
1 tsp Carom seeds
2 tbsp. dry fenugreek leaves
1/4 cup fresh fenugreek leaves
1 tbsp butter ( ghee) or Oil
A pinch Asafoeida
Salt to test
½ cup Warm water
Method:
In a mixing bowl, add wheat flour, maida, semolina, pepper powder, asafetida, kasoori methi, fresh methi, salt and ghee and mix everything well.
Add warm water little by little and knead it to a smooth and stiff dough. Cover the dough and keep it aside for 15 mins
After 15 mins, make big dough balls and dust each dough ball with wheat flour and roll it like a big roti.
Cut into diamond or square shapes using a pizza cutter.
Deep Fry:
Meanwhile, heat oil in a pan. Initially the oil should be hot so that if we, it should rise immediately, but once you add the namak para keep the flame in medium and deep fry till the namak para becomes golden brown and crispy and all the bubbles ceases completely. If the flame is hot, then the namak para will become golden color so quickly but it will be soft and not crispy. So keep the flame in medium and patiently fry the namak para till it is crispy
Allow the fried namak para to cool down and then store it in air-tight container.
Preheat your air fryer at 350 F for 7-minutes. Drop a piece of namak para. Do not overlap them. Cook them for 4 minutes and flip and cook for another 2 minutes or turn brown. Transfer the namak Para is to a cooling rack.
The crispy and crunchy Methi Namak Pare ready to serve!

Methi Puri:
If you want to make Puris, divide the dough into small balls and roll them into disc-shaped thin tortillas or rotis.
You can use a round cookie cutter to cut small discs out of it and line it with parchment paper (optional).
Cook them for 4 minutes and flip and cook for another 2 minutes or turn brown. The tiny Puris will puff up and look brown around the edges. Transfer the puris to a cooling rack.

Enjoy them with a cup of Tea
Cool them down and store in an air tight container. If stored properly they can be enjoy for up to a month.
