Mexican Bhel:
Ingredients:
Ten large flour tortillas (optional : White, Orange, Green),
5 green onion stem finely chopped,
1 green, 1 red, 1 yellow, and 1 orange capsicum finely chopped,
1 cucumber finely chopped,
1 Avocado finely chopped,
1 tomatoes,
2 cups shredded lettuce,
1 cup black beans,
1 cup corn,
1 cup promenade,
1/2 cup chopped fresh coriander,
1 cup shredded cheddar cheese,
1/2 cup finely chopped jalapeno pepper,
11/2 cup fat free refried beans,
1 packet taco seasoning mix,
1 can enchilada sauce,
1 to 8 oz tomatoes sauce,
1 cup chunky salsa,
1 tbsp Ginger,
1 tbsp. garlic,
½ tbsp. cumin seeds powder,
1 tbsp. chili powder,
salt to taste,
oil for frying, water.
Cut flour tortillas in 1” squares and deep fry in oil till golden brown; keep aside. You can use red and green to make more colorful as seen in picture.
Place the refried beans in a large saucepan, cover the beans with 1 inch of water, and stir in 1 pk of taco seasoning mix. Place over low heat for 10 minutes, stirring occasionally.
Place enchilada sauce in another sauce pan and mix with tomato sauce. Add cumin powder, chili powder, ginger, garlic and salt to taste; use water as needed to achieve desired consistency. Bring to a boil over high heat, and then reduce heat to low, and simmer for 5 minutes.
Serving:
Now take fried tortillas in a serving plate, topped with hot seasoned refried beans and enchilada sauce mix.
Sprinkle cheddar cheese to get melt and mix all the other ingredients to it also add your choice toppings as well.
Topped with chopped fresh cilantro, salsa and jalapeño if like really hot.
Sour cream is optional.
