Fresh Tuver Dana Kachori in Ravioli style
I have shaped the Kachoris in a ravioli
These crispy and flaky Kachoris are served with Cilantro Chutney, ketchup or tamarind chutney.
Ingredients
For filling:
1 tablespoon oil
2 fresh green chili peppers, chopped
½ teaspoon jeera (cumin seeds)
1 pinch hing (asafoetida powder)
2 cups fresh mashed Tuvar Dana
1 teaspoon white sugar
1 teaspoon lemon juice
salt to taste
For Ravioli:
2 cups Maida (refined white flour)
1 tablespoon oil
2 tablespoons water, or more as needed
salt to taste
oil for frying
Method:
Grind Tuver dana into a coarse paste using chopper or grinder, and lemon juice and mix well.
Filling:
Heat 1 tablespoon oil in a skillet over medium heat; add green chile peppers, jeera, and hing. Cook and stir for 1 minute. Add mashed tuver dana , sugar, and salt; cook and stir over low heat until peas are soft, about 5 minutes. Remove skillet from heat and cool pea mixture.
Ravioli:
Mix maida, 1 tablespoon oil, and salt together in a bowl; add enough water until a dough forms. Allow to rest for 2 to 3 minutes.
Ravioli Style:
Form dough into small two balls and roll each into a flat circle using a rolling pin. Spoon pea mixture into the center on one circle. Brush with water on sides. Cover with another circle sheets. Press the sides and Seal the corners with a fork so it is completely enclosed.
Round Kachoris:
Make lemon sized rounds of the dough. Roll out to 4 inches diameter
Place 1 tbsp of green peas stuffing and cover to make kachoris. Roll out to 1/2 inch thickness.
Dip frying:
Heat oil for frying in a deep-fryer or large saucepan. Working in batches, fry filled dough Ravioli until crisp, 3 to 5 minutes per batch.
Transfer to a paper towel-lined plate to drain.
Preheat Air Fryer at 350 F for 3 Minutes. Apply little oil on each Kachori using brush or oil spray.
Set them on pre heated Air Fryer at 350 F for 15 minutes and flip after 7-8 minutes.
You also can spray some cooking oil in between (optional).
To make the extra crispy, you can air fry some more time, and that will taste like they've been fried!
