Sabudana Fries / Fingers

I've found the most comfortable, easy, healthy, most approachable way to prepare Sabudana Vada is to cook them in the Air Fryer.


My family is so addictive! We love these delicious sabudana vadas because they are healthy, nutritious, vegan, gluten-free, and versatile.

Sabudana Fries / Fingers


1 cup Sabudana 1 cup

½ cup Cassawa (Mogo) boiled & mashed

Salt as needed

Oil 1 tbspn

¼ cup Roasted Peanuts (grind in to powder)

¼ tsp Jeera

1/4 tsp Green Chilly

¼ cup fresh Coriander

¼ Lemon or lime juice

Wash the 1 cup Tapioca Pearls (sabudana). Soak for 6-8 hours or overnight in 1/2 cup water.

After 6-8 hours, Tapioca Pearls would have soaked all the water and will be soft. Do finger test, it should mash in between fingers.

Add soaked Tapioca Pearls, salt, fresh coriander, green chilli, lemon juice, dry cumin powder, and roasted peanuts in a bowl.

Grate the boiled Cassava (Mogo) and add to the bowl. Mix everything nicely.



Preheat Air Fryer at 350 F for 3 Minutes.

Make fries shape, small balls (or shape you want) from the dough. If it is too sticky, apply little oil on your palms.

Set them on pre heated Air Fryer at 350 F for 15 minutes and flip after 7-8 minutes

You also can spray some cooking oil. To make the extra crispy Sabudana Vada, you can air fry some more time, and that will taste like they've been fried!

Here low calorie, non-fried, crispy, and tasty sabudana fries are ready to serve.

Cooktop way:


Heat oil in a non-stick frying pan. Make small balls (or shape you want) from the dough. Flatten them like a cutlet. If it is too sticky, apply little oil on your palms. Fry the vadas in hot oil turn high heat till golden brown from both the sides.

Serve hot with coriander chutney or ketchup.

If you do not have an air fryer, then you can shallow fry the vadas in a pan with little oil or use appam pan.

It is good to eat Sabudana Vada for Breakfast, Lunch, Brunch, or Dinner.


Note:


The sabudana should be soaked well and should be very soft.

Soak the Tapioca Pearls in mentioned amount of water for best result. If the water is more, it will become soggy and if it is less, it will be raw from inside.


You can use Rajgira Flour/Paneer/tapioca flour/arrowroot powder as a binder/binding agent.
