Sabudana Vada

Tapioca Pearls and Casava ( Mogo) Flowers


Wash the 1 cup Tapioca Pearls (sabudana). Soak for 6-8 hours or overnight in 1/2 cup water.


Note:


Soak the Tapioca Pearls in mentioned amount of water for best result. If the water is more, it will become soggy and if it is less, it will be raw from inside.) After 6-8 hours, Tapioca Pearls would have soaked all the water and will be soft.

Recipe


Add soaked Tapioca Pearls, salt, fresh coriander, green chilli, leamon juice, dry cumin powder, Ginger and roasted peanuts in a bowl. Grate the boiled potatoes or Casava (Mogo) and add to the bowl. Mix everything nicely.

Heat oil in a non stick frying pan. Make small balls (or shape you want) from the dough. Flatten them like a cutlet. If it is too sticky, apply little oil on your palms. Fry the vadas in hot oil turn high heat till golden brown from both the sides.

Serve hot with coriander chutney.


You can bake or air fry the vada instead of frying them.
